Bringing you another one pot meal! This one pan sausage and veggie skillet dinner is an easy weeknight dinner with only 10 minutes prep! Filled with potatoes, sausage, carrots, onions, peppers, cauliflower and broccoli, its actually a really easy 30 minute dinner that you can adjust to the vegetables you have on hand.
So when I made this it ended up being even easier than I thought! Since I used sausage it was super simple to throw together.
While the baby was on her tail end of her nap, I spent about 20 minutes chopping up the veggies. I tossed all of it into a big bowl and covered it with water than it was ready to go once it was time to start cooking.
Just to clarify though in case some of you are getting confused. I chopped up the onions, potatoes, carrots, peppers, and cauliflower, and that went into a big bowl with water.
I then diced up the sausage and put that on a plate in the fridge.
The broccoli got cut and and left on the counter by the other veggies! (it needs much less cooking time than the other veggies)
Don’t worry I’ll give you the step by step instructions right way!
I don’t know about you, but summers here are super busy with 5 kids home (shocking because I only have 2 in school, and really only 1 of those is full time) but for some reason having them all home EVERY. DAY makes it super hard.
Maybe its because the routine is gone? Or mostly gone? Breakfast doesn’t happen first thing anymore which for me means my entire day is screwed up. Then before I know it, its way past the time that I should have started supper!
That’s another reason why this sausage skillet dinner has quickly become my go-to because I can defrost the sausage in water WAY faster than I can any other meat.
Anyone else have an issue with always forgetting to take out meat to defrost?!?!
I plop my sausage into piping hot water. (Yes, this is 100% safe. We are only leaving it in the water long enough to defrost, NOT long enough for the meat to get warm enough to grow bacteria)
Then by the time my other veggies are cut up (10-15 minutes later) my sausage is defrosted!.
I’ll give you the exact steps (in the other you need to make this one pot sausage and veggies dinner then I’ll answer the most common questions I get!
Step by Step Tutorial on how to make this one pan Sausage and Veggie Skillet Dinner
1.Take out your sausage if its still frozen and place it HOT water. (hot enough that you can’t really put your hand in it)
2. Then get out all you veggies. Dice them up into 1 inch approx. pieces. You can do bigger or smaller too, just try to keep them uniform so that everything cooks evenly. Once everything is cut up, but it into a big bowl and cover with cold water, if your prepping it early.
3.If you are using broccoli keep it seperate! It cooks much faster than the other veggies so you’ll add that in last.
4.By now your sausage will be defrosted. Dice up your sausage into bite sized pieces. You don’t have to cut them small, but it will be easier for the kids to eat that way and it’ll cook faster!
5.Once you ready to start cooking heat up a large cast iron pan on medium high heat. Once the pan is hot, add 1 olive oil and dump in your veggies. (make sure you drain the water first if you prepped in advance!!)
6.Let the veggies cook for about 10 minutes.Stirring every 3-4 minutes. Then add in your seasonings and chicken broth. This adds SOOO much flavour and keeps everything moist! Let it cook another 5 minutes
7.Add your sausage and cook for 5 minutes.
8.Add broccoli and let it cook 5 minutes
Do I have to use a cast iron skillet?
No… any frying pan/skillet will work. BUT I do get much more even heat in my cast iron and you’ll be able to make the pan much hotter, really getting the crisp vegetables
Don’t have one? That’s OK! Make it today anyway in your regular frying pan, and buy one from amazon! They are actually really cheap and it’s a pan that’ll last you a life time.
How do you tell if sausage is cooked?
Since this sausage is cut up it’ll only take 5-7 minutes before its cooked! You’ll be able to tell when the outside is crispy and the inside is a pale pink and the juices run clear.
Do I need to cut the sausage before I cook it?
You don’t have to. If you have small sausage, you can add it your pan before you add the veggies, but just beware that it’ll be harder to stir the veggies around
Can I do other veggies for this sausage skillet dinner?
Yes! Use up whatever veggies you have on hand! You can use butternut squash, zucchini, add in spinach or kale at the end, use what you have!
