I don’t know about you, but the thought of having to make pancakes in the morning for my kids is like asking me to run a marathon. Not happening! BUT then I figured out this super simple trick to make ridiculously easy, healthier pancakes!

I mean, these I can make in the morning, there’s no standing at the stove for 30 minutes flipping pancakes.

And ya I know… I could make them ahead and just store them in the freezer, but lets be real.

That’s not happening either!

But these easier, and even healthier pancakes?

Seriously. They are easy, they are healthier than the traditional pancakes, plus the kids love them! So really its a win all around

So how do you make these easy pancakes?

In your food processor and then bake them in your oven!
Seriously, its so easy!

I throw all the ingredients in my food processor, then pour it onto a cookie sheet.

Then it bakes for about 10-12 minutes, and BAM. Pancakes. Even the baby loves them!

No your not going to get those beautiful round traditional pancakes. And if your kids are uber picky and the pancakes have to LOOK like pancakes or they won’t eat them, then call them something else!!

Like panookies.

And since I make these with a little different ingredients that my regular pancakes, because we are trying to make them a little healthier, I know my kids will flip if I tell them we are eating pancakes. Then not only have them use different ingredients but a different way of making them.

So in my house?

They aren’t pancakes.

They’re panookies.

Its amazing how many less complaints I hear when I call certain food by a different name!

One day I might buy one of these really big griddles so that I can actually make normal, round pancakes, but for right now? The sheetpan works wonders.

What makes these pancakes healthier?

Not to much crazy stuff. I’m just using oatmeal and plain yogurt instead of your traditional flour and buttermilk.

Yup that’s it.

Nope they aren’t these super healthy pancakes. But they are good. My kids love them, and they are better for you than your normal ones. BUT they still taste ALMOST the same.

How to make these easy pancakes!

Honestly this pancake batter will be done in just a few minutes, and then after about 10 minutes in the oven, you have breakfast! Literally within 15 minutes breakfast is on the table

So first step?

1. Drop all the dry ingredients, oatmeal, flour, salt, baking powder, baking soda and cinnamon in your food processor or blender. Blend until your oatmeal looks like flour.

2. Add all the remaining ingredients, blend for another minute to mix it well.

3. Pour onto a sheetpan.

4. Bake for 10-12 minutes at 350 degrees

5. Dive in and eat!! YUM

See? Even you as an overwhelmed, going crazy mom (not that that’s me at ALL) can totally make this!

Can I make pancake batter in advance?

Yes! actually , to be honest, I usually make the pancake batter when I’m make supper at night, store it in the fridge and then bake it in the morning while my hubby and I are eating breakfast!

We are always up before them, we eat together and then he goes off to work as I wake up the kids and send them off to school. (If you don’t do this I HIGHLY recommend it!

Even though we don’t actually talk much during this time, its sooo nice to start the day together like this!

  • 2 cups oatmeal
  • 1/2 cup all purpose flour or gluten-free all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 cup vanilla Greek yogurt
  • 4 eggs lightly beaten
  • 2 cups sliced strawberries
Prep Time 5 minutes
Cook Time 10 minutes

  • 2 cups oatmeal

  • 2 tsp baking powder
  • 1 tsp baking soda

  1. Preheat oven to 350 degrees. Place oatmeal in food processor or blender and pulse until smooth. The more like flour you can get it the less you'll have a change in texture. Add in the other dry ingredients and pulse Add in wet ingredients, Pulse 1-2x until batter is smooth. Pour into a greased cookie sheet and bake for 10-12 minutes.
