Kid Approved Easy No Bake Chocolate Oatmeal Cookies

You know what I love the most about these no bake chocolate oatmeal cookies? Not only are they secretly super healthy, but they are insanley delicious. Like even my husband loves these! So not only will my super picky 18 month old eat these cookies, but also my husband (and yes I will to!)

Summer’s here. And its HOT. VERY HOT. The last thing I want to do is turn on my oven. But yet, I still wan to be able to feed my kids a healthy snack. That isn’t only fruit. And since all kids love no bake chocolate cookies I decided to find a way to make them healthy without them knowing!

The best part about these cookies? I freeze them into molds, so not only are they really cute, but I don’t have to wait to roll them. These molds are smal enough that the kids can eat them in one bite so they don’t get really messy. Except for my baby, but she makes a mess with absolutly anything that she eats.

With no sugar, flour or butter you honestly could not make a cookie any healthier than this. This recipe for chocolate no bake cookies are made with oatmeal, coconut, hemp hearts, honey and cranberries! Follow this easy step by step recipe to make sure they don’t fail!

Recipe for Oatmeal Chocolate No Bake Cookies

 

Honestly, this recipe is so easy (5 minute prep) that you don’t even need a step by step tutorial for it! But since I love teaching you exactly how I create my recipes so that they turn out for you to, I’ll still be walking you through this no bake cookie

First things first, to make this recipe super quick and easy get yourself this handy little food processor. I use this one ALL.THE.TIME. Honest. If I’m making anything that requires things to be chopped up small instead of spending the time to do it by hand I throw it in here. While I do have a big food processor as well, I only use that when I’m doing a large qountity recipe, like things that go in the freezer.

 Add your cranberries into the food processor, pull the handle a few times to get finley chopped cranberries. 

In a small saucepan melt together peanut butter, honey, coconut oil and vanilla. If you don’t want to use your stove top you can also just pop it into you microwave!

Combine all the ingredients together, and spoon about 1 tbsp into each mold. Press down and freezer for at least 1 hour.

I love using these flower silicone molds for these cookies. Not only does it make it look pretty, but the cookie also comes out so much easier!

What’s even better about these no bake cookies is that I can let my super picky daughter eat as many as she wants. Even if its breakfast! With the hemp hearts, oatmeal and cranberries, its probably the most healthy food I’ve been able to get her to eat! ( I told you… she’s really picky)

Ingredients
  1. 1/2 c coconut
  2. 1 c oatmeal
  3. 1/4 c cocoa
  4. 1/2 c chopped cranberries
  5. 1/2 c mini chocolate chips(optional)
  6. 1/2 c hemp hearts (optional)
  7. 2/3 c peanut butter
  8. 2 tbsp honey
  9. 1/4 c coconut oil
  10. 1 tsp vanilla
Instructions
  1. In a small saucepan(or microwave) melt together peanut butter, coconut oil, honey and vanilla. Meanwhile chop cranberries in a food processor, combine with melted peanut butter mixture and remaining ingredients.
Options
  1. If you don't have hemp hearts, you can leave them out
  2. If you like cookies sweeter, add mini chocolate chips
