Delicious and Easy Lemon Baked Chicken

Some days you just need a dinner that takes like 2 minutes to make right? Maybe you have laundry that needs to be folded or you have to help your kids with their homework again, and don’t want to spend a lot of time putting dinner together! Those are the days that you need to make this Delicious and Easy Lemon Baked Chicken!
This lemon baked chicken is honestly, the easiest recipe EVER. And, completely fool proof. So even if you’re just venturing out into making your own food for your family, I promise that this is a great recipe to start with! It’s that easy:)
With only a few ingredients in this baked chicken, you don’t have to worry about having tons of different flavors in your mouth either. The lemon gives it the fresh taste that we just love right? This no fail baked lemon chicken is tender and juicy, and so easy that you have no excuse not to make it. So let’s get to the step by step recipe, shall we?
Step by Step For Delicious and Easy Lemon Baked Chicken
Make sure that your chicken breasts are completely thawed. If not, just pop them in the microwave on the defrost setting until they are no longer frozen.
Grease a 3 quart shallow baking dish or line with these oven safe pan liners for easy cleanup. Unfortunately without them, the sauce does bake onto the pan. (9x13 will work too) Place chicken in the pan, and sprinkle each side with salt and pepper.
In a small bowl, grate or press in 3 garlic cloves. Using a mini grater like this one, or having a garlic press, saves you so much time rather than trying to mince the garlic clove with a knife. I use mine on almost a daily basis, so the super low price you pay for it, is so worth it!
Add in molasses, lemon juice, and soy sauce. Whisk and pour over chicken. Make sure you pour a little on top of each chicken and not just onto the pan because then much less of the flavor will go into the chicken!
Let the chicken rest at room temperature for 30 minutes, or if you want to make this ahead of time, (like in the morning before you leave) then just pop it into the fridge until you are ready to bake the chicken. If possible let the chicken come to room temperature before baking, but that step isn’t essential.
If you want a stronger lemon taste, slice a lemon thinly and place them on top of the chicken. Bake uncovered at 375 degrees for 20-25 minutes. Before serving, spoon the remaining juices in the pan over the chicken and let sit for 5-10 minutes.

- 4 chicken breasts
- salt and pepper to taste
- 3 garlic cloves, minced
- 1 tbsp molasses
- 3 tbsp lemon juice
- 2 tbsp soy sauce
- 1 lemon (optional)
- Place defrosted chicken in a lined 9x13 pan. Sprinkle each side with salt and pepper.
- Mix together remaining ingredients for sauce. Pour over chicken and let rest 30 minutes if you can.(Can also be prepped in the morning and placed in the fridge)
- Cut lemon into slices and place over chicken.(This step is optional) Bake at 375 degrees for 20-25 minutes or until chicken is done.
- Spoon sauce from the bottom of the pan over chicken and let rest for 5-10 minutes before serving.
- Top with cilantro to make it pretty!
