Need an easy meatloaf recipe? But one that is still delicious, and healthier than many recipes out there? Look no further! I have the best Easy Barbecue Meatloaf Recipe. This easy recipe has only about 5 minutes prep, plus you can sneak in a few veggies, so they will eat their vegetables without even knowing it.
Are your kid’s anything like mine, and as soon as they see a little piece of pepper or even an onion, all of the sudden whatever it was that they are eating is suddenly gross and they don’t want to finish it?
Quickly Chopping the Vegetables to make this Easy Barbeque Meatloaf
While not every child I have has that attitude, a few definitely do! So since with this bbq meatloaf recipe, there are both onions and peppers in it, I have come to learn, that I need to chop those vegetables up very tiny, basically minced.
While I used to spend time just doing this by hand, cutting each vegetable into thin strips and then chopping again into tiny pieces. Since I’ve been cooking for quite some time, and often need my vegetables minced, I did get pretty quick at it. But now? I have something that lets me do this even quicker. Honestly, my peppers and onions are minced as tiny as could be in less than a minute.
I use this super handy mini chopper/processor. All I need to do is chop the vegetables up into a few pieces, pull the handle out a few times, and I’m done! No longer are they able to find all the pieces in the meatloaf, so that means no more whining that they don’t like vegetables in their meatloaf.
I also love how uniform its able to make the vegetables. Often with other choppers, I’ve tried there would be a few large pieces left that didn’t get minced. Also, you can control how big you want the pieces by how many times you pull the handle. I not only use this with many of my vegetables, but it also works really well for fruits too!
So now that we know how to make this recipe go really quick(and sneak in a couple extra vegetables!) we’ll go into the step by step tutorial.
How to make this incredibly Easy BBQ Meatloaf Recipe
First, mix together your sauce ingredients. Use a small bowl, add in the ketchup, brown sugar, vinegar, and mustard. Give it a quick whisk, and set it aside for later use.
Make sure your ground beef is completely defrosted(I won’t judge you if you use your microwave to defrost it, I do it myself sometimes!) If you have too many frozen pieces, the ground beef won’t get mixed very well with the spices, leaving you with an uneven meatloaf.
Put all the remaining ingredients into a large bowl(including the minced vegetables) I use my stand mixer for this bbq meatloaf recipe, making it easier, plus I don’t need to get my hands dirty:) Add in about half the sauce. I never measure this, to be honest, I just dump some in until it looks to be about half the amount. It doesn’t need to be exact. Add in your ground beef.
Turn your mixer to speed one, and mix for about 1 minute. If you don’t have a stand mixer, just get your hands in there and mix. If you have a timer on your mixer then use it.
Honestly, how often does it not happen that one of the kids does something, or you get distracted by something else? You don’t want to over mix your meatloaf or you will end up with a dense meatloaf. If you are using your hands, it’s pretty hard to over mix, but in a stand mixer, it doesn’t take to long before that happens.
Turn the meat out into a 9×5 dish. I never grease mine, there is usually enough fat content in the ground beef that I don’t have issues with it sticking. If you do have a very lean ground beef, then I would definitely lightly grease the pan. Flatten the ground beef mixture so the top is smooth and you fill the corners. Just don’t pack in you meatloaf really tight, or that to, will give you a dense, tough meatloaf.
Pour on the remaining sauce, cover and bake at 375 degrees for 45 minutes. After 20 minutes of cooking, remove the foil.
Depending on the fat content of your ground beef, you may notice a lot of juices in sitting in your pan along with the ground beef. Don’t worry about it! It won’t affect the meatloaf at all. When you are serving the meatloaf, when you scoop up each piece, you can either leave the juice sitting in the pan or scoop it up with the meatloaf. All depending on how juicy, and how much of the fat content you want.

- 2 lbs ground beef defrosted
- 1/2 c oatmeal
- 1/2 tsp pepper
- 3/4 tsp salt
- 1 tsp parsley
- 1/2 tsp poultry seasoning
- 1/2 green pepper chopped
- 1/2 onion chopped
- 1/2 c ketchup
- 1/4 c vinegar
- 1/4 c brown sugar
- 1/2 tsp mustard
Mix together the ingredients for the sauce and set aside.
Finely chop pepper and onion, having a mini chopper makes this step very easy!
Combine the remaining meatloaf ingredients.
Mix on speed 1 for 1 minute. Press lightly into a 9x5 loaf pan and cover.
Bake at 375 for 45 minutes. Remove foil after 20 minutes
