If you don’t have your grill on yet, go turn it on. By the time you have your chicken ready, your grill will be hot. Also, if your chicken isn’t defrosted, then do that quick to.
If I don’t have my meat defrosted yet, then I’ll just pop it into my microwave on the drefrost setting, then within 5- 10 minutes it will be defrosted without any of those microwave cooked edges.
Take your bottle of greek salad dressing and a bottle of italian dressing. Combine 1/2 c of the greek dressing with 1/4 cup of the italian dressing and pour it into a ziploc bag.
I like to use a bag, because it makes it much easier to coat the entire chicken. If you are going to be grilling right away, take the chicken out of the bag, and sprinkle with rock salt and pepper.
I highly recommend using rock salt. Especially on meats. It is honestly a level up from regular salt. Plus, it’s salt, so how cheap do you not think it is? I promise, rock salt adds so much more flavor to your meats than regular salt does! It’s so very worth it to have these 2 different salts! (table and rock)
Once you have sprinkled rock salt and pepper on each side of your chicken. Let rest until grill is hot. Or if its hot already then just grill right away. Also, if you are making this ahead of time, place it in the fridge and let it marinate until you are ready to cook dinner.
Grill chicken over medium high heat for 5-7 minutes on each side. For my grill, I’ve found that 7 minutes on the first side, and then 5 minutes on the second side, brings it to the perfect temperature of 165 degrees.
Make sure you have one of these long BBQ thermometers so that you don’t have to risk burning your hands using the traditional small ones! While grilling, brush chicken with a large BBQ brush from the remaining dressings that are in the bag. Brush the chicken, when you lay it on the grill.
About 2 minutes later, and then before you flip the chicken over again. Total in basting the chicken 3 times on each side. Once the chicken reaches the temperature of 165 degrees, remove lay on foil, and pour over the last remaining dressing. Cover and let the chicken rest for 5-10 minutes longer. (This is the perfect time to set the table, and get everyone at the table for dinner)
While your chicken is grilling, grill corn on the cob with it, and toss a salad together and you have a great meal! Plus- every single person in my family loves every single one of those! Ok, maybe my 2 youngest don’t eat salad, but my older boys(4&5) love it all.
