The Best Dressing Ever For Strawberry Spinach Salad

Need a salad that even your kids will eat? This strawberry salad is one that the entire family is going to love! From my husband to my kids this strawberry spinach salad is a winner. The part that’s even better is that this dressing is the best dressing for strawberry salad ever! Plus, this one will let you sneak in even more vegetables!
My second oldest just loves this salad. Every time I pull out the spinach and strawberries, he exclaims ‘Oh your making strawberry salad!’ And really, I love it to. With the crisp spinach and the freshness of the strawberries combined together with cheese and bacon? What isn’t to love? It’s the perfect fresh salad for a summer day.
What’s really handy about this salad, is you can easily adjust the ingredients to your tastes! If you’re like my husband and like everything with bacon, well then add more cheese and bacon with less fruit. But is your like the rests of us in my house, then add more fruit and less cheese with bacon. Although really, can you go wrong with bacon?
But now the real reason I’m actually sharing this recipe with you. The dressing. I’m not even exaggerating when I say its the best out there! Plus, it’s a super easy way to get more veggies into the kids without them even realizing it. So, as always, here is the step by step recipe.
How to Make the Best Dressing for a Strawberry Spinach Salad
To make this dressing really easy to make, you need an immersion blender. It saves you so much time because you can just dump it all there, and go. I have this blender, and I love it! I am starting to use it even more than my regular blender because it just works so much better, and need I mention, so much handier than the big clunky one? I always thought that getting an emersion blender would be way out of my budget, but surprisingly, they aren’t all that expensive!
In your emersion blender, blend togther grapeseed oil, melted coconut oil (if you leave it solid, the dressing will be thick and not pourable), orange juice, lime juice and dijon mustard. Blend until smooth. Slice and add 1 avocado and blend again. Set aside. Unless you are making the dressing hours ahead of time, leave it at room temperature or the coconut oil will begin to harden and make it hard to pour.
How to Make the Spinach Salad to go with this Amazing Dressing
Dice and fry bacon until crumbly, and drain on a paper towel. Dice cheese into cubes and place in a large bowl, dice strawberries and add to bowl with cranberries. If you like to have more crunch to your salad add in sliced almonds. Add spinach.

This is why you need a really big salad bowl, notice how light and fluffy spinach is? You can’t pack it into the bowl because then you won’t be able to mix in the dressings.
Right before serving, mix in the dressing and enjoy!

- 1/4 c grapeseed oil
- 1/4 c melted coconut oil
- 1/2 c orange juice
- 1 tbsp lime juice
- 1 tbsp Dijon mustard
- 1 avocado
- 6-8 slices bacon (cooked and crumbled)
- 1 c chopped strawberries
- 3/4 c cranberries
- 1/2 c cubed mozzarella cheese
- 1/2 c almonds (optional)
- 6 oz fresh spinach
- In an immersion blender blend together ingredients, expect for avocado. Once liquids are blended, add avocado and blend until smooth.
- Cook and crumble bacon, drain on paper towel. Dice up strawberries and mozzarella cheese, and add all remaining ingredients to a large salad bowl. Before serving toss together with dressing.
